Lucy’s Maple-Lemon Sweet Potatoes
This year the Beaudine and Jorik clans from CALL ME IRRESISTIBLE and THE GREAT ESCAPE are celebrating Christmas together, and let me tell you, it's going to be a zoo! Lucy volunteered to make the sweet potatoes, and since neither Meg nor Panda like the traditional casserole with marshmallows on top, she’s making this delicious recipe, courtesy of actress Jennifer Garner. Lucy and I both highly recommend. Lucy’s Maple-Lemon Sweet Potatoes ORIGINAL RECIPE: (See Lucy’s alterations below) 2 lbs. sweet potatoes peeled and cut into 1" X 2" chunks 1 Tbsp. olive oil 1/2 Tsp. kosher salt 1/8 tsp. ground black pepper 2 Tbsp. maple syrup 2 Tbsp. lemon juice 1.
