Bev’s Banana Bread

3/4 cup sugar
1/2 cup margarine or butter, softened
2 eggs
1 cup (2 medium) mashed ripe bananas
1/3 cup milk
1 teaspoon vanilla
2 cups all purpose flour
1/2 cup chopped nuts, if desired
1 teaspoon baking soda
1/2 teaspoon salt

Heat oven to 350 degree F. Grease bottom only of 9×5 or 8×4 inch loaf pan. In large bowl, beat sugar and margarine until light and fluffy. Beat in eggs. Add bananas, milk and vanilla; blend well. In small bowl, combine flour, nuts, baking soda, and salt; mix well. Add to banana mixture; stir just until dry ingredients are moistened. Pour into greased pan. Bake at 350 degree F for 50 to 60 minutes until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Cool completely. Wrap tightly and store in refrigerator.

Yield: 1 (16 slice) loaf.

Jane’s Pecan Snickerdoodles

2-1/2 cups flour
1 cup finely chopped PLANTERS Pecans
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
1 cup (2 sticks) butter or margarine, slightly softened
1-3/4 cups sugar, divided
2 eggs
1 tsp. ground cinnamon

PREHEAT oven to 375°F. Mix flour, pecans, cream of tartar, baking soda, and salt in large bowl; set aside.

BEAT butter and 1-1/2 cups of the sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs; beat until well blended. Add dry ingredients; beat on low speed until well mixed. Form dough into 1-inch balls. Mix remaining 1/4 cup sugar and cinnamon. Roll balls in cinnamon sugar. Place 2 inches apart on baking sheets.

BAKE 10 to 12 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.
